Berry Bonanza

This evening we celebrated 
the pending sale of Aspen Meadows.

In preparation,
I picked a big bowl of blackberries.

All the big, black, plump ripe ones;
enough to fill my baking dish.

I tossed the berries with some sugar and flour 
and then made Jackie's cobbler topping.
She brought cobbler into work last Friday;
the BEST cobbler I have ever had.
She gave me her recipe.
Yes!

Heat oven to 350
Mix together:
1 cup flour
1 cup sugar
1 tsp baking powder
1/2 tsp salt.

Beat an egg
dump it into the bowl
and mix it up.

Spread it over the top of your berries.
Melt a stick of butter
Pour that over the topping.

Bake for 45 minutes
until it's golden brown.
Turn off the oven but leave the cobbler inside
Let it cool off slowly in the oven; door ajar.
The topping will be perfect
I promise.

Start the celebration with champagne,
cheeses,

shrimp,

smoked salmon

and good friends.
Sit outside on the viewing stand,
with the horses softly blowing as they eat their hay, below you
and the sun sinking behind the hills,
the oppressive heat of the day
mellowing into dusk.
Just before the dusk turns to dark,
gather the plates,
and settle inside the house.
And eat cobbler.
